YQ is a special population wheat developed by the late Martin Wolfe at Wakelyns Agrofroestry & the Organic Research Centre. It is made up of 20 different types of wheat all crossed together to get 190 different genetic lines within the population. The idea of genetic diversity within the field is like that of hedging your bets; with diversity comes resilience to disease and different weather conditions allowing us to grow this wheat without pesticides or fertiliser.

It is a great all purpose flour makes delicious pastry, biscuits, cakes and bread. This is wholegrain flour which has 100% of the grain, not wasting any of the bran and germ (where all of the nutrients and much of the flavour in the grain is). It is stone milled to order and is best used fresh (within 3 months). Stone milling is gentler on the grain than roller miller, preserving more of the grains natural nutrients.
